Pylsa með Öllu (Icelandic Hot Dog with Everything)

The hot dog is a national favorite in Iceland, sold from harbor-side stands and gas stations alike. Ordering ein með öllu, one with everything, gets you a lamb-blend sausage in a soft bun with ketchup, sweet brown mustard, remoulade, raw onion and crispy fried onion. The mix of sweet, tangy, creamy and crunchy is what makes it special. Make the sauces and onions first, then heat the sausages gently, which keeps them plump.

Instructions

  1. For the remoulade, stir the mayonnaise, pickles, capers, mustard, lemon juice, sugar and turmeric together in a small bowl. Cover and chill.
  2. For the sweet brown mustard, stir the mustard, brown sugar and vinegar until the sugar dissolves. Set aside.
  3. Toss the sliced onions with the flour and a pinch of salt until coated. Heat 1 cm (1/2 in) of oil in a heavy skillet to 170°C (340°F). Fry the onions in 2 or 3 batches for 2 to 3 minutes each, until golden and crisp, and drain on paper towels.
  4. Rinse the diced white onion under cold water for 30 seconds to take off its sharp bite, then drain well and pat dry.
  5. Bring a wide pot of water to a gentle simmer. Add the hot dogs and heat for 8 minutes, until hot through (74°C / 165°F). Do not let the water boil hard, or the skins may split.
  6. Warm the buns for 1 to 2 minutes in a steamer basket over simmering water, until soft and hot.
  7. Tuck a hot dog into each bun. Add ketchup, a stripe of sweet brown mustard and a spoonful of remoulade, then top with the raw onion and a pile of crispy onion. Serve at once.

Tips

  • Look for hot dogs that include lamb. Lamb gives the sausage its distinct flavor, but good beef or pork hot dogs work too.
  • Make the remoulade a day ahead. The flavors blend as it sits, and it keeps in the fridge for 4 days.
