Banana Peanut Butter Roll-Ups

Children can make this roll-up themselves after seeing it once. A soft tortilla is spread with peanut butter, a banana goes at one edge, and the whole thing is rolled tight and sliced into wheels. It takes five minutes, needs no cooking and holds together in a lunchbox. Use sunflower seed butter at nut-free schools, and wrap the roll tightly in baking paper until lunchtime.

Instructions

  1. Warm the tortillas for 10 seconds each in the microwave, wrapped in a damp paper towel, or for a few seconds in a dry pan. Warm tortillas bend without cracking.
  2. Spread about 1 1/2 tablespoons of peanut butter evenly over each tortilla, right to the edges. Sprinkle lightly with cinnamon.
  3. Place a banana along one edge of each tortilla, trimming it so it fits within the width.
  4. Roll the tortilla up tightly around the banana and press the seam closed. The peanut butter holds it shut.
  5. Serve whole, or slice each roll into 4 or 5 rounds. For lunchboxes, wrap the rolls tightly in baking paper and slice them just before eating.

Tips

  • Choose bananas that are ripe but still firm. Very soft ones squash and leak when rolled.
  • Use sunflower seed butter for a nut-free version. For extra flavor, add a few raisins, a drizzle of maple syrup or a sprinkle of dairy-free mini chocolate chips before rolling.

Questions and answers

How do I stop banana roll-ups from going brown?

Assemble them just before packing and wrap tightly in baking paper. The peanut butter shields the banana from air, so browning is slow.

Can I make banana roll-ups the night before?

Yes. Wrap the rolls tightly and keep them in the fridge. The banana may darken slightly, but the taste is fine. Slice them in the morning.

Can I use whole-wheat tortillas?

Yes. Whole-wheat tortillas add fiber and a nuttier flavor. Warm them well so they do not crack when rolled.
