Chocolate-dipped strawberries are the fastest dessert that looks like a lot of effort. Ripe berries and good dark chocolate are all you need, and you spend about 25 minutes working plus 20 minutes while the chocolate sets. The one rule is that the berries must be completely dry, because a drop of water makes melted chocolate seize into a grainy paste. They are best on the day they are made, when the chocolate snaps and the fruit is still firm and cool.
Instructions
- Wash the strawberries gently and dry them completely with paper towels, leaving the green tops on. Any water left on the berries will make the chocolate seize. Line a tray with parchment paper.
- Melt the dark chocolate with the oil in a dry heatproof bowl over barely simmering water, or in the microwave in 20-second bursts, stirring each time, until smooth.
- Let the chocolate cool for 2 minutes. Hold a strawberry by its stem, dip it into the chocolate and turn it to coat about three-quarters of the berry.
- Let the excess drip off for a few seconds, then set the berry on the parchment. Repeat with the remaining berries.
- Press chopped nuts or coconut onto the wet chocolate if you like. Drizzle the melted white chocolate over the berries with a fork or a small piping bag.
- Chill for 15 to 20 minutes, until the chocolate is firm. Serve within a few hours.
Tips
- Take the strawberries out of the fridge 20 minutes before dipping. Cold berries sweat, and the moisture makes the chocolate slide off.
- Use the same method for dried apricots, orange segments patted dry, banana slices, pretzels or marshmallows.
