Beef and Potato Skillet Hash with Fried Eggs

Hash began as a way to use up leftovers, and this version keeps that spirit with simple ingredients. Potatoes are steamed in the pan with a little water so they are tender inside before they crisp, while ground beef, onion and bell pepper add flavor and substance. Press the mixture down and leave it alone for a few minutes at a time to get a good brown crust. A fried egg on top turns it into a complete dinner, equally good for brunch.

Instructions

  1. Put the potatoes in a large cast-iron or nonstick skillet with 1 tbsp of the oil, 60 ml (1/4 cup) water and 1/4 tsp of the salt. Cover and cook over medium heat for 8 minutes until almost tender, then uncover and let any water evaporate.
  2. Move the potatoes to a plate. Add 1 tbsp oil to the pan and brown the beef over medium-high heat for 5 minutes, breaking it up, until no pink remains. Move it to the plate, leaving about 1 tbsp of fat in the pan.
  3. Add the onion and pepper and cook for 5 minutes until soft. Stir in the garlic, paprika, thyme, the remaining salt and the pepper for 30 seconds.
  4. Return the potatoes and beef to the pan and press into an even layer. Cook for 5 minutes without stirring until the underside is crusty, then turn in sections and press again. Repeat once or twice, 8 to 10 minutes in all.
  5. Fry the eggs in a separate nonstick pan in the last 1 tbsp of oil for about 3 minutes, until the whites are set and the yolks are still soft.
  6. Divide the hash among plates, top each with a fried egg and sprinkle with the parsley.

Tips

  • Cook the eggs until the yolks are firm if you are serving anyone pregnant, elderly or very young.
  • Leftover roast potatoes or cooked beef save time. Start at step 3 with 400 g (14 oz) of cooked potatoes.
