Pull-apart bread is meant to be shared at the table, torn apart with your hands. Small balls of soft dough are dipped in garlic and herb butter, tucked into a pan with mozzarella and Parmesan, then baked until golden and stretchy. It works as a party snack, a side for soup or pasta, or a Friday night project. Serve it warm, while the cheese is still soft.
Instructions
- Mix the flour, yeast, sugar and salt in a large bowl or stand mixer. Add the warm milk and softened butter and knead for 8 to 10 minutes, until smooth and elastic.
- Shape the dough into a ball, place it in an oiled bowl, cover and let rise for 1 hour, until doubled.
- Stir the melted butter, garlic, parsley and salt together in a wide bowl. Grease a 23 cm (9 inch) round cake pan.
- Divide the dough into 24 pieces, about 29 g (1 oz) each, and roll each into a ball. Dip each ball in the garlic butter and arrange in the pan, scattering some mozzarella and Parmesan between the layers.
- Pour any remaining butter over the top. Cover and let rise for 30 to 40 minutes, until puffy and filling the pan.
- Heat the oven to 190°C (375°F) for the last 20 minutes of rising. Scatter the remaining cheese over the top and bake for 25 to 30 minutes, until deep golden and bubbling. The center should read 90°C (195°F). Cover with foil if it browns too quickly.
- Cool for 5 minutes, then serve warm and let everyone pull off a piece.
Tips
- Short on time? Use about 600 g (1 1/3 lb) of store-bought bread or pizza dough and skip the first two steps.
- Add a pinch of chili flakes to the butter, or swap the parsley for chives or thyme.
