Cheesy Sausage and Broccoli Rice Skillet

This is a family dinner built from pantry staples: sausage, rice, broccoli and cheese. The sausage is browned first and its fat flavors the rice, which cooks in stock in the same pan. Small broccoli florets steam on top for the last few minutes, and a handful of sharp cheddar stirred in at the end makes the rice creamy and rich. It is mild enough for children and easy to adjust with whatever vegetables you have.

Instructions

  1. Heat the oil in a large deep skillet with a lid over medium-high heat. Add the sausage meat and cook for 6 to 7 minutes, breaking it into small pieces, until browned and no pink remains. Spoon off all but 1 tbsp of the fat.
  2. Add the onion and cook for 4 minutes until soft. Stir in the garlic and paprika for 30 seconds.
  3. Add the rice and stir for 1 minute. Pour in the stock, add the salt and pepper and bring to a boil.
  4. Reduce the heat to low, cover tightly and cook for 12 minutes without lifting the lid.
  5. Scatter the broccoli over the rice, cover again and cook for 5 to 6 minutes, until the rice is tender and the broccoli is bright green.
  6. Off the heat, stir in two-thirds of the cheese until melted. Sprinkle the rest on top, cover for 2 minutes, add the lemon juice if using and serve.

Tips

  • Frozen broccoli florets work. Add them straight from frozen and allow 2 extra minutes of cooking.
  • Mozzarella or a spoonful of cream cheese can replace the cheddar for a milder, creamier result.
