Deviled eggs are the first dish to disappear at American picnics, potlucks and Easter spreads. Halved hard-boiled eggs are filled with a creamy mixture of mashed yolks, mayonnaise, mustard and a splash of vinegar or pickle brine, then dusted with paprika. The details matter: eggs boiled just long enough that the yolks stay bright yellow, a smooth filling and plenty of seasoning. This recipe makes 24 halves and scales easily.
Instructions
- Lay the eggs in one layer in a large pot and cover with cold water by 2.5 cm (1 in). Bring to a full boil over high heat.
- Take the pot off the heat, cover it and leave the eggs for 11 minutes.
- Drain the eggs and cool them in a bowl of ice water for 10 minutes. Peel them under cool running water.
- Cut each egg in half lengthwise. Pop the yolks into a bowl and set the whites on a platter.
- Mash the yolks with a fork until fine. Add the mayonnaise, mustard, vinegar, salt, pepper and cayenne and mix until smooth. Fold in the pickles and taste for seasoning.
- Spoon or pipe the filling into the whites. Dust with paprika, scatter with chives and chill for 15 minutes before serving.
Tips
- Eggs that are a week or two old peel more easily than very fresh ones. Cooling them in ice water right away also helps.
- For an extra smooth filling, press the yolks through a fine sieve. Carry the filled eggs in a muffin tin so they do not slide around.
