Dame Blanche (Vanilla Ice Cream with Hot Chocolate Sauce)

Dame blanche (white lady) is the sundae Belgians order in cafés and tearooms: vanilla ice cream, warm bittersweet chocolate sauce and whipped cream, nothing more. The contrast between hot sauce and cold ice cream is the whole point, so make the sauce just before serving and pour it at the table. Good dark chocolate with at least 55 percent cocoa gives the best depth.

Instructions

  1. Put 4 tall glasses or sundae dishes in the freezer for 15 minutes.
  2. Whip the cold cream with the powdered sugar and vanilla to soft peaks. Keep it in the fridge.
  3. Heat 150 ml cream in a small saucepan until steaming. Remove from the heat, add the chocolate and salt, leave for 1 minute, then stir until smooth and glossy. Keep warm.
  4. Place two scoops of ice cream in each chilled glass.
  5. Top with a spoonful of whipped cream and sprinkle with almonds, if using.
  6. Pour the warm chocolate sauce over at the table, or serve it in a small jug so everyone can pour their own.

Tips

  • Use warm sauce, not hot. If it is too hot, it turns the ice cream to soup at once. Let it cool for a minute or two before pouring.
  • Make the sauce up to 3 days ahead and keep it in the fridge. Reheat gently in a bowl over hot water until just warm.
