Strawberry mousse is a pale pink, softly set dessert that tastes strongly of fresh berries. Pureed strawberries are lightened with whipped cream, and a small amount of gelatin keeps the mousse stable in glasses instead of sinking into a puddle. Ripe, fragrant strawberries make all the difference, because cream mutes their flavor. Serve it in clear glasses so the color shows, with a few fresh slices on top.
Instructions
- Blend the strawberries with the sugar and lemon juice into a smooth puree. For a very smooth mousse, press the puree through a sieve.
- Sprinkle the gelatin over the cold water in a small bowl and leave it for 5 minutes to soften.
- Warm the softened gelatin in the microwave for 10 seconds, or over a pan of hot water, until completely liquid. Stir it into the puree.
- Chill the puree for 15 to 20 minutes, stirring now and then, until it is slightly thickened but not set.
- Whip the cream to soft peaks. Fold one-third into the puree to loosen it, then fold in the rest until no streaks remain.
- Spoon into 6 glasses and chill for at least 3 hours, until set. Top with sliced strawberries.
Tips
- Strawberries lose flavor in cream, so use the ripest berries you can find, and add a little extra lemon juice if they are bland.
- Do not let the gelatin mixture boil, and do not add it to ice-cold puree, or it will set in strings. The puree should be at room temperature.
