Rice, a fried egg and something savory on top is an everyday dinner in many homes, and mushrooms make a very good topping. Here they are browned hard in a hot pan, then finished with garlic and a splash of soy sauce until glossy, with a big handful of spinach wilted in at the end. The runny yolk acts as the sauce. It takes about 35 minutes and costs very little.
Instructions
- Rinse the rice in a sieve until the water runs mostly clear. Put it in a saucepan with the water and salt, bring to a boil, then cover and cook on the lowest heat for 12 minutes. Take the pan off the heat and leave it covered for 10 minutes.
- Heat 1 tablespoon of the oil in a large skillet over high heat. Add half of the mushrooms in a single layer and cook for 4 to 5 minutes, stirring little, until deeply browned. Move them to a plate and repeat with another tablespoon of oil and the remaining mushrooms.
- Return all the mushrooms to the pan and add the garlic. Cook, stirring, for 1 minute until fragrant, then add the soy sauce, sugar and pepper and toss for 30 seconds until glossy.
- Add the spinach in handfuls and stir until it wilts, about 1 to 2 minutes. Take the pan off the heat.
- Heat the last tablespoon of oil in a non-stick pan over medium-high heat. Crack in the eggs and cook for 2 to 3 minutes, until the whites are set and crisp at the edges and the yolks are still runny.
- Fluff the rice with a fork and divide it among four bowls. Top with the mushrooms and spinach and a fried egg, then finish with spring onions, sesame seeds and chili.
Tips
- Do not crowd the pan. Mushrooms release a lot of water, so cook them in two batches over high heat to brown them instead of steaming them.
- For a vegan bowl, replace the egg with crispy tofu or extra mushrooms. Use tamari instead of soy sauce for a gluten-free version.
