Ginger Lime Fizz

This fizz tastes like a good ginger beer without the long fermentation. A spoonful of strong ginger syrup, a squeeze of lime and cold sparkling water make a drink that is hot, sweet and sharp in the same sip. Adjust each part to taste, since ginger syrups vary a lot in strength. It works as a mocktail at parties, and many people find it soothing after a big meal.

Instructions

  1. Fill two tall glasses with ice cubes.
  2. Divide the ginger syrup and lime juice between the glasses.
  3. Top each glass with 180 ml (3/4 cup) of cold sparkling water.
  4. Stir once or twice from the bottom with a long spoon, just enough to mix without losing the fizz.
  5. Taste and add a little more syrup for sweetness or lime juice for sharpness.
  6. Add a lime wheel to each glass and serve right away.

Tips

  • Make the ginger syrup stronger by grating the ginger instead of slicing it, and simmering it for 15 minutes before straining.
  • For a party, mix the syrup and lime juice in a jug and chill it. Pour into glasses over ice and top each one with sparkling water so the drink stays lively.
