Gromperekichelcher (Luxembourg Crispy Potato Fritters)

Gromperekichelcher are the crisp potato fritters sold hot from stalls at Luxembourg markets and fairs, wrapped in paper and eaten on the spot. Grated potato is mixed with onion, parsley and a little egg and flour, then fried until the edges turn lacy and brown. They are usually eaten with apple sauce, though they also come alongside soup or fish. At home they make a quick supper or side dish.

Instructions

  1. Grate the potatoes on the coarse side of a box grater into a bowl of cold water to stop them browning. Drain, reserving the starch at the bottom of the bowl, and squeeze the potato very dry in a clean kitchen towel.
  2. Mix the potato with the onion, parsley, egg, flour, salt, pepper and nutmeg, adding the starch from the bottom of the water bowl. Stir until evenly combined.
  3. Heat about 1 cm (1/2 in) of oil in a large heavy skillet over medium-high heat until it shimmers, about 175°C (350°F).
  4. Scoop about 1/4 cup of mixture for each fritter, press it into a flat patty about 8 cm (3 in) wide and 1 cm (1/2 in) thick and slide it into the oil. Fry 3 or 4 at a time without crowding the pan.
  5. Fry for 4 to 5 minutes per side, until deep golden, crisp at the edges and cooked through. Drain on a rack or paper towels and keep warm in a 100°C (210°F) oven while you cook the rest.
  6. Sprinkle with a little salt and serve hot with apple sauce.

Tips

  • Squeeze the grated potato really dry, because water is the enemy of crisp fritters. Adding back the starch that settles in the soaking bowl helps bind the mixture without more flour.
  • Fry a small test fritter first to check the seasoning and the oil. Oil that is too cool makes them greasy, and oil that is too hot browns them before the center cooks.
