Khao jee pate is the Lao street sandwich, sold from carts and stalls in the morning. A light, crusty baguette is warmed, split and spread with smooth liver pâté, then filled with sliced cooked pork, cucumber, tomato, lettuce, pickled carrot and a spoonful of chili sauce. It reflects the French baguette tradition in Laos, but the fillings and heat are local. It makes an easy breakfast or lunch that you can assemble in 15 minutes.
Instructions
- Toss the carrot with the vinegar, sugar and salt. Leave for 15 minutes, then drain.
- Heat the oven to 200°C (400°F). Warm the baguette pieces for 4 to 5 minutes until the crust is crisp.
- Split each piece lengthwise, leaving one side attached like a hinge. Pull out a little of the soft crumb to make room for the filling.
- Spread the pâté generously on the bottom half and the chili sauce on the top half.
- Layer on the pork, cucumber, tomato, lettuce, pickled carrot and coriander.
- Close the sandwiches, press down gently and serve at once while the bread is still warm.
Tips
- Choose a light baguette with a thin, crackly crust, since a very hard crust is difficult to bite through when stuffed. Lao baguettes are shorter and lighter than French ones.
- Keep the pâté chilled until you spread it. Eat the sandwiches the day they are made, or the bread softens.
Questions and answers
What is in a Lao baguette sandwich?
A crusty baguette filled with liver pâté, sliced pork or ham, cucumber, tomato, lettuce, pickled vegetables and chili sauce. The mix of warm bread, rich pâté and fresh vegetables is the point.
Is khao jee pate like banh mi?
They are related in style, as both are baguette sandwiches with pâté and fresh vegetables. The Lao version is usually simpler, with fewer herbs and a sweet chili sauce.
Can I make it without liver pâté?
Yes. Use extra thin slices of roast pork and a spread of mashed avocado or a little more chili sauce. The flavor will be lighter and less rich.
