Garlic Herb Baked Pita Chips

Pita chips are easy to make and far crisper than most bagged ones. Splitting each pita into two thin rounds is the trick, since thick wedges stay chewy in the middle. Brush the rough sides with olive oil that has been steeped with garlic and herbs, cut into wedges and bake until golden. They scoop up dips, go with soup and keep for days in a tin.

Instructions

  1. Heat the oven to 180°C (350°F). Line two baking trays with baking paper.
  2. Stir the oil, garlic, oregano, thyme, salt and pepper together in a small bowl. Let it stand for 5 minutes so the garlic flavors the oil.
  3. Cut around the edge of each pita with kitchen scissors and peel it apart into two thin rounds.
  4. Brush the rough inner side of each round with the oil mixture. Stack the rounds and cut them into 8 wedges each with scissors or a pizza cutter.
  5. Arrange the wedges in a single layer on the trays, oiled side up.
  6. Bake for 8 to 10 minutes, rotate the trays and bake for 3 to 5 minutes more, until golden and crisp. Watch the thin tips, which burn first.
  7. Cool on the trays. The chips crisp up as they cool. Store in an airtight container for up to 5 days.

Tips

  • Splitting the pita gives light, crisp chips. Whole thick wedges stay chewy in the middle, so only skip the splitting if you like a sturdier chip.
  • Swap the herbs for 1 teaspoon of smoked paprika, or add 1/2 teaspoon of finely grated lemon zest to the oil.

Questions and answers

How long do homemade pita chips last?

Once fully cool, they stay crisp in an airtight container for up to 5 days. If they soften, re-crisp them in a 160°C (320°F) oven for 3 minutes.

Why are my pita chips chewy in the middle?

The pita was not split or the wedges were too thick. Split each bread into two thin rounds and bake until the center no longer bends.

Can I make pita chips in an air fryer?

Yes. Air fry a single layer at 170°C (340°F) for 3 to 5 minutes, shaking once, until golden. Work in batches so the wedges do not pile up.
