Sausage rolls are a fixture at Australian bakeries, children's birthday parties and footy-final lunches. A well-seasoned mince filling, bulked with grated vegetables and breadcrumbs so it stays juicy, is rolled in flaky puff pastry and baked until crisp and deep gold. They are best hot, but they also reheat well and freeze beautifully, so a double batch is never wasted. Serve with plenty of tomato sauce.
Instructions
- Heat the oven to 200°C (400°F) and line two large baking trays with baking paper.
- Squeeze the grated carrot and onion in a clean towel to remove extra liquid. Mix with the mince, breadcrumbs, egg, tomato sauce, Worcestershire sauce, herbs, salt and pepper, kneading by hand for 1 minute until sticky.
- Cut each pastry sheet in half to make eight rectangles. Divide the filling into eight portions and shape each into a log about 25 cm (10 in) long.
- Lay a log along the long edge of each rectangle. Brush the opposite edge with beaten egg, roll the pastry over the filling and press to seal, leaving the seam underneath.
- Cut each roll into 3 pieces. Place them on the trays, seam side down, 3 cm (1 in) apart.
- Brush the tops with beaten egg, sprinkle with sesame seeds if using, and snip two small slits in each roll.
- Bake for 25 to 30 minutes until deep golden and the filling reaches 71°C (160°F). Cool for 5 minutes before serving with tomato sauce.
Tips
- Squeezing the grated vegetables keeps the filling from leaking moisture into the pastry, which gives crisper bottoms.
- If the kitchen is warm, chill the cut rolls for 15 minutes before baking. Cold pastry puffs higher and holds its shape.
Questions and answers
Can I freeze sausage rolls?
Yes. Freeze the unbaked cut rolls on a tray, then bag them. Bake from frozen at 200°C (400°F) for about 35 minutes, until golden and cooked through.
Can I use sausages instead of mince?
Yes. Squeeze the meat from 700 g (1.5 lb) of good pork sausages and mix it with the grated vegetables and breadcrumbs. Skip the extra salt, because sausage meat is already seasoned.

Tomato sauce on the side is the classic. For a meal, add a green salad or coleslaw.
