Anzac Biscuits (Oat and Coconut Cookies)

Anzac biscuits are baked in huge numbers around Anzac Day on 25 April, when Australians and New Zealanders remember their servicemen and women. They contain no eggs, which helps them keep well in a tin, and the butter and golden syrup melt together to give a chewy middle and a crisp edge. Bake them a little longer for a crunchy biscuit, or pull them early for a soft, bendy one.

Instructions

  1. Heat the oven to 160°C (325°F) and line two baking trays with baking paper.
  2. Stir the oats, coconut, flour, sugar and salt together in a large bowl.
  3. Melt the butter and golden syrup in a small pan over low heat, stirring until smooth.
  4. Stir the bicarbonate of soda into the boiling water, then into the butter mixture. It will foam up. Pour it straight into the dry ingredients and mix well.
  5. Roll level tablespoons of the mixture into balls and set them 5 cm (2 in) apart on the trays. Flatten each one slightly with your palm.
  6. Bake for 12 to 15 minutes, swapping the trays halfway, until deep golden. Cool on the trays for 5 minutes, then move to a rack. The biscuits crisp up as they cool.

Tips

  • Bake for 12 minutes for chewy biscuits and 15 for crisp ones. They firm up a lot as they cool, so judge by color rather than feel.
  • Keep the biscuits in an airtight tin for up to 2 weeks. If they soften, re-crisp them on a tray in a 150°C (300°F) oven for 5 minutes.

Questions and answers

Why are Anzac biscuits made without eggs?

The melted butter and golden syrup bind the oats and flour, so eggs are not needed. The lack of egg is also why the biscuits keep well in a tin.

Can I use honey or maple syrup instead of golden syrup?

Honey works well, though it browns faster, so check the biscuits a minute earlier. Maple syrup gives a thinner, crisper biscuit with a different flavor.

Why did my Anzac biscuits spread too thin?

The mixture was too warm or the butter too hot. Let the mixture sit for 5 minutes before rolling, and place the balls on cool trays.

How long does it take to make Anzac Biscuits (Oat and Coconut Cookies)?

About 30 min in total: 15 min of preparation and 15 min of cooking.
