Makaronilaatikko (Finnish Macaroni and Beef Casserole)

Makaronilaatikko is the casserole most Finns grew up on. Macaroni is stirred with browned beef and onion, covered with a custard of milk and eggs and baked until the top is golden and the inside sets like a savory pudding. Nothing about it is fancy, and that is why it is on the school lunch menu and in family freezers. Serve with ketchup or lingonberry jam.

Instructions

  1. Heat the oven to 200°C (400°F) and butter a 2 liter (2 quart) baking dish, about 23 x 30 cm (9 x 12 in).
  2. Boil the macaroni in salted water for 2 minutes less than the package says, since it will finish cooking in the oven. Drain.
  3. Melt the 2 tbsp butter in a large skillet and cook the onion for 5 minutes until soft. Add the beef, salt and pepper and cook for 8 minutes, breaking up the meat, until browned.
  4. Stir the beef mixture into the macaroni and spread everything in the dish.
  5. Whisk the eggs with the milk, salt and pepper and pour the custard over the macaroni. Scatter the breadcrumbs on top and dot with butter.
  6. Bake for 40 minutes, until the custard is set and the top is golden. Rest for 10 minutes, then cut into squares and serve with ketchup or lingonberry jam.

Tips

  • Undercook the pasta slightly. It keeps absorbing custard in the oven, and fully cooked pasta turns mushy.
  • For a ham version, replace the beef with 300 g (10.5 oz) diced cooked ham and skip the extra salt in the meat.
