Mazamorra morada is the purple corn pudding of Peru. Dried purple corn is simmered with pineapple peel, cinnamon and clove to make a deep violet liquid, which is sweetened, filled with dried and fresh fruit and thickened with starch until glossy. It is served warm or cold, dusted with cinnamon. It is the same flavor base as chicha morada, the drink, only thicker and fruitier.
Instructions
- Rinse the purple corn and put it in a large pot with the water, pineapple peel and core, cinnamon and cloves. Bring to a boil, then simmer, partly covered, for 50 to 60 minutes, until the liquid is deep purple.
- Strain the liquid, pressing on the corn, and discard the solids. You should have about 2 liters (8 cups); top up with water if needed.
- Return the liquid to the pot. Add the sugar, apricots, prunes and apple and simmer for 10 minutes, until the fruit softens.
- Stir the starch into the cold water until smooth. Pour it into the pot in a thin stream, stirring, and simmer for 5 minutes until thickened and glossy, like a loose custard.
- Stir in the fresh pineapple and lime juice and cook for 2 minutes more. Remove from the heat.
- Serve warm or chilled in bowls, dusted with cinnamon.
Tips
- Dried purple corn is sold at Latin grocers and online. If you cannot find it, simmer 400 g (14 oz) of frozen blackberries with the spices for a similar color and tartness, though the flavor will differ.
- The pudding thickens as it cools. Loosen it with a splash of water or fruit juice before serving.
