Molho de Jindungo (Angolan Hot Pepper Sauce)

Molho de jindungo is the fiery table sauce of Angola: small, very hot red chilies crushed with garlic, salt, lemon juice and oil. It comes in a little bowl beside grilled fish, chicken, funge and muamba, and a little goes a long way. The sauce is simple, so it relies on good chilies and fresh lemon. Wear gloves when handling the chilies, and keep the jar in the fridge.

Instructions

  1. Wearing gloves, trim the chili stems. For a milder sauce, slit the chilies and scrape out the seeds.
  2. Pound the chilies, garlic, onion, if using, and salt in a mortar, or pulse them in a small food processor, to a coarse paste.
  3. Stir in the lemon juice, vinegar and oil until combined.
  4. Leave the sauce to rest for 30 minutes so the flavors blend. Taste and add more salt or lemon if needed, then spoon into a clean jar.

Tips

  • Wash your hands, knife and board thoroughly after handling hot chilies, and avoid touching your eyes.
  • Pack the finished sauce in a jar and top with a thin layer of oil to keep the color bright and to extend its life.
