Overnight Yeast-Raised Waffles

Yeast-raised waffles take two minutes of work the night before and repay it at breakfast. The batter ferments slowly in the fridge, building a faint, bready flavor and an open crumb that crisps beautifully in the iron. In the morning you only whisk in eggs and a pinch of baking soda, then cook. They are the waffles to make when you want a quiet weekend morning and a noticeably crisp result.

Instructions

  1. The evening before, whisk the flour, yeast, honey and salt in a large bowl. Choose a bowl at least three times the volume of the batter, because it will rise a lot.
  2. Warm the milk until just lukewarm, about 38°C (100°F). Whisk it into the flour mixture with the melted butter until smooth.
  3. Cover the bowl and refrigerate for 8 to 12 hours. The batter will become bubbly and puffed.
  4. In the morning, heat the waffle iron and an oven set to 100°C (200°F), with a wire rack on a baking sheet inside.
  5. Whisk the eggs, vanilla and baking soda into the risen batter. It will deflate and turn pourable, which is what you want.
  6. Brush the hot iron with oil and pour in 120 to 180 ml (1/2 to 3/4 cup) of batter. Cook for 4 to 5 minutes, until deeply golden and crisp.
  7. Hold finished waffles on the rack in the oven while you cook the rest. Serve hot.

Tips

  • Use a roomy bowl, since the batter can triple while it rests. If it threatens to climb out, stir it down once.
  • The mixed batter can wait in the fridge for up to 24 hours before cooking. Leftover cooked waffles freeze well and reheat in a toaster.

Questions and answers

Why use yeast in waffles?

Yeast adds a mild bready flavor and builds a lighter, crisper waffle with an open crumb. It also does the work overnight, so the morning is fast.

Can I leave the batter on the counter overnight?

It is safer to refrigerate it. Cold fermentation is slower but gives plenty of flavor, and it keeps the milk-based batter out of the temperature range where bacteria multiply.

Are yeast waffles the same as Belgian-style waffles?

Many Belgian-style waffles are yeast-raised, and these share the same light, crisp texture. This batter is simpler and works in any standard waffle iron, with no pearl sugar or dough to shape.
