Pytt i Panna (Swedish Potato and Meat Hash)

Pytt i panna means bits in a pan, and that is exactly what it is: diced potatoes, onion and cooked meat or sausage fried until crisp. It is a Swedish home classic that grew out of using up the Sunday roast. Topped with a fried egg, pickled beets and a squirt of ketchup, it makes a fast, cheap and filling supper.

Instructions

  1. Put the potato cubes in a pan of cold salted water, bring to a boil and cook for 4 to 5 minutes, until barely tender. Drain well and let them steam dry for 5 minutes.
  2. Heat 1 tbsp butter and 1 tbsp oil in a large heavy skillet over medium-high heat. Add the potatoes in a single layer, in two batches if needed, and fry for 10 to 12 minutes, turning only now and then, until golden and crisp. Move to a plate.
  3. Add the remaining butter and oil to the pan. Fry the onion and meat for 6 to 8 minutes, until the onion is golden and the meat has browned edges.
  4. Return the potatoes to the pan, season with the salt, pepper and thyme, and fry everything together for 2 minutes.
  5. In a second pan, melt the butter for the eggs and fry the eggs sunny side up for about 3 minutes, until the whites are set.
  6. Divide the hash among four plates and top each with an egg. Serve with pickled beets, ketchup and mustard.

Tips

  • Leftover boiled potatoes are even better. Skip the parboiling and fry them straight from the fridge for a crisper result.
  • If the potatoes steam instead of crisp, the pan is too full. Give them more room, more heat and more time before you stir.

Questions and answers

What meat goes in pytt i panna?

Almost any cooked meat: leftover roast beef, pork, ham or sausage. In many Swedish homes it is diced falukorv or another mild sausage, and a mix of two kinds gives the best flavor.

Why is pytt i panna served with pickled beets?

The sharp, sweet beets cut through the rich fried potatoes and meat. Their red juice is also part of the look of the dish.

Can I make pytt i panna vegetarian?

Yes. Replace the meat with 250 g (9 oz) of diced smoked tofu or mushrooms fried until browned, and cook the potatoes and onion the same way.
