Kūmara, the sweet potato brought to Aotearoa by Polynesian voyagers, is eaten roasted, mashed and fried across New Zealand today. Wedges roasted until crisp at the edges and soft inside, served with sour cream and sweet chili sauce, are a favorite at cafés, pubs and barbecues. The dip is cool, sweet and gently hot, and it suits the natural sweetness of the roots. Use a hot oven and do not crowd the tray.
Instructions
- Heat the oven to 220°C (425°F) and put two baking trays inside to heat up.
- Cut the kūmara lengthwise into wedges about 2 cm (3/4 in) thick and pat them dry with a clean towel.
- Toss the wedges with the oil, salt, paprika and pepper until evenly coated.
- Carefully spread the wedges on the hot trays in a single layer with space between them. Roast for 30 to 35 minutes, turning once, until deep golden at the edges and tender in the center.
- Spoon the sour cream into a bowl, drizzle over the sweet chili sauce and scatter with the herbs.
- Serve the wedges hot with the dip.
Tips
- Dry the cut wedges and preheat the trays. This gives crisp, caramelized edges instead of steamed ones.
- Add 1 tsp garlic powder or a pinch of chili flakes to the seasoning. White or purple sweet potatoes give a drier, less sweet wedge.
