Rødgrød med fløde, red porridge with cream, is a Danish summer staple and a famous tongue twister for anyone who is not Danish. Red berries are simmered briefly with sugar, thickened with a little starch and chilled until soft-set, then served in bowls with a pour of cold cream. It is sweet, tart and refreshing, and takes under half an hour of work.
Instructions
- Rinse the berries. Hull and halve the strawberries and strip fresh red currants from their stems with a fork. Frozen berries can go in as they are.
- Put the berries, water and 100 g sugar in a saucepan. Bring to a simmer over medium heat and cook for 5 to 8 minutes (10 for frozen), until the berries soften and release their juice.
- Stir the starch mixture well and pour it into the pan in a thin stream, stirring. Bring just back to a boil and cook for 1 to 2 minutes, until the juice is glossy and lightly thickened.
- Take the pan off the heat and stir in the vanilla and lemon juice. Pour into a bowl or six glasses and sprinkle the surface with the 1 tbsp sugar to stop a skin forming.
- Cool for 30 minutes, then chill for at least 2 hours.
- Serve cold, with the cream poured around and the almonds scattered over, if using.
Tips
- Berries vary in sweetness, so taste before you thicken and adjust the sugar and lemon juice. Red currants give the traditional tartness. If you cannot find them, use sour cherries or cranberries for part of the mix.
- Potato starch gives the clearest, glossiest result and is the traditional choice. Cornstarch also works, but the pudding can look a little cloudier.
- If you have no light cream, cold whole milk is a lighter alternative for pouring.
Questions and answers

What texture should rødgrød have?
