Rupjmaizes Kārtojums (Latvian Layered Rye Bread Dessert)

Rupjmaizes kārtojums, which means layered rye bread, is the dessert Latvians make from yesterday's loaf. The crumbs are fried in butter with sugar and cinnamon until crisp and caramelized, then layered in glasses with softly whipped cream and tart lingonberry jam. The contrast of crunchy, creamy and sour is the whole appeal. It turns up at celebrations and in cafes, and it takes about 35 minutes of work, plus time for the crumbs to cool.

Instructions

  1. Crumble the rye bread into coarse crumbs with your fingers or a food processor.
  2. Melt the butter in a large pan over medium heat. Add the crumbs, 50 g of sugar and the cinnamon and cook, stirring often, for 8 to 10 minutes, until dark, crisp and caramelized. Spread on a plate to cool completely. The crumbs crisp up as they cool.
  3. Whip the cream with the 25 g of sugar and the vanilla to soft peaks.
  4. In 6 glasses, layer crumbs, jam and cream, then repeat. Finish with cream, a spoonful of jam and a sprinkle of crumbs.
  5. Serve right away for the most crunch, or chill for 1 hour so the crumbs soften slightly.

Tips

  • Use dense dark rye bread, a day or two old. Fresh bread turns sticky in the pan. Keep the crumbs separate until serving if you want them crunchy.
  • Lingonberry jam is traditional, but cranberry sauce, blackcurrant jam or stewed apples also work.

Questions and answers

Can I make rye bread dessert ahead of time?

Toast the crumbs up to 3 days ahead and store them airtight. Layer the glasses within 2 hours of serving, or the crumbs go soft.

What kind of bread should I use?

A dense, dark sourdough rye without seeds, similar to Latvian rupjmaize. German-style or Danish-style rye bread also works.

Can I use yogurt instead of cream?

Yes. Thick Greek yogurt sweetened with a little honey gives a lighter, tangier layer.
