Think of this as a loaded baked potato turned into a sheet-pan dinner. The potatoes roast until crisp, then broccoli and white beans join them for the last stretch, and a shower of sharp Cheddar melts over the top just before serving. The beans add protein, so the pan is filling without any meat. It is cheap, gets children to eat broccoli and takes only fifteen minutes of real work.
Instructions
- Heat the oven to 220°C (425°F) and put a large rimmed sheet pan inside to heat.
- Toss the potatoes with 2 tablespoons of the oil, half the garlic powder, paprika, salt and pepper. Spread them on the hot pan, cut side down, and roast for 20 minutes.
- Toss the broccoli and beans with the remaining oil and seasonings in a bowl.
- Take out the pan, stir the potatoes and add the broccoli and beans in a single layer.
- Roast for 15 minutes, until the broccoli is charred at the tips, the beans are crisp at the edges and the potatoes are golden and tender.
- Sprinkle the Cheddar over the pan and roast for 3 to 4 minutes until melted. Scatter with spring onions and serve straight from the pan.
Tips
- Dry the beans well so they roast rather than steam. A spoonful of plain yogurt or sour cream on the side adds a cool contrast.
- Add cooked bacon pieces or sliced cooked sausage with the cheese if you want a meaty version.
Questions and answers
Can I use other cheeses?
Yes. Mozzarella, Gruyere or a smoked cheese all melt well. Grate your own, since bagged cheese contains starch and melts less smoothly.
Can I use canned chickpeas instead of white beans?
Yes. Chickpeas roast a bit crisper and take the same time. Dry them well before tossing.
How do I reheat the leftovers?
Warm them on a tray in a 200°C (400°F) oven for 8 to 10 minutes, so the potatoes crisp up again. A microwave works but softens them.
