Smoky Black Bean Dip

Canned black beans, an onion and a few spices become a thick, smoky dip in about 20 minutes. Simmering the beans briefly with sautéed onion, cumin and smoked paprika gives far more flavor than blending them straight from the can, and lime juice at the end keeps the taste fresh. Serve it warm or cold with chips, raw vegetables or toasted flatbread, or use it as a spread in wraps, burgers and baked potatoes.

Instructions

  1. Heat the oil in a medium saucepan over medium heat. Cook the onion with a pinch of salt for 5 minutes, until soft and starting to turn golden.
  2. Stir in the garlic, cumin, smoked paprika and chili powder and cook for 30 seconds, until fragrant.
  3. Add the beans and the water. Bring to a simmer and cook for 5 minutes, until most of the water is absorbed and the beans are very tender.
  4. Take the pan off the heat. Mash with a potato masher for a rustic dip, or blend with a stick blender for a smooth one, adding a splash of water if it seems stiff.
  5. Stir in the lime juice, salt and cilantro. Taste and adjust with more lime or smoked paprika.
  6. Serve warm or at room temperature in a bowl, with a drizzle of olive oil and a pinch of paprika on top.

Tips

  • For heat, add 1 to 2 teaspoons of chopped chipotle chilies in adobo or a pinch of cayenne with the spices.
  • Thin leftover dip with a little water and use it as a sauce for rice bowls, or spread it on toast under sliced avocado.
