Soft Dinner Rolls

Soft dinner rolls belong next to a roast, a pot of soup or a pile of mashed potatoes. This dough is enriched with milk, butter and an egg, which makes a tender crumb that stays soft for a couple of days. The rolls bake side by side in one pan, so their sides stay pale and pull apart easily. Brush them with butter as they come out of the oven.

Instructions

  1. Mix the flour, yeast, sugar and salt in a large bowl or stand mixer. Add the warm milk, softened butter and egg and mix to a rough dough.
  2. Knead for 8 to 10 minutes, until smooth, soft and slightly tacky. Shape into a ball, place in an oiled bowl, cover and let rise for 1 hour, until doubled.
  3. Grease a 23 x 33 cm (9 x 13 inch) baking pan. Divide the dough into 12 equal pieces, about 70 g (2.5 oz) each.
  4. Shape each piece into a smooth ball by cupping your hand over it and rolling it against the counter. Arrange the balls in 3 rows of 4 in the pan.
  5. Cover and let rise for 45 minutes, until puffy and touching each other.
  6. Heat the oven to 190°C (375°F) for the last 20 minutes of rising. Bake for 18 to 22 minutes, until deep golden on top. The center of a roll should read 88°C (190°F).
  7. Brush the hot rolls with the melted butter and cool in the pan for 10 minutes before serving.

Tips

  • To bake in the morning, shape the rolls the night before, cover the pan and refrigerate for up to 12 hours. Let them stand at room temperature for 45 minutes, then bake as usual.
  • Weigh the dough pieces so all the rolls bake evenly, and cover the pan loosely with foil if the tops brown before the centers reach 88°C (190°F).
