Tiradito belongs to Nikkei cooking, the style that combines Japanese technique with Peruvian ingredients. The fish is cut into thin slices like sashimi, laid out flat and dressed just before serving with a sauce of lime juice, soy sauce, ginger and yellow ají amarillo. It is a clean, elegant plate that takes minutes. If the fish is truly fresh, sharp knife work is the only skill you need.
Instructions
- Chill 4 plates in the fridge for 15 minutes. Keep the fish in the fridge until you slice it.
- Whisk the lime juice, soy sauce, ají amarillo paste, ginger, garlic, sugar and sesame oil until smooth. Chill for 10 minutes.
- With a very sharp, long knife, slice the fish against the grain into thin slices about 3 mm (1/8 in) thick, holding the knife at a slight angle and using one long pull for each slice.
- Fan the slices in a single, slightly overlapping layer on the chilled plates.
- Just before serving, spoon the sauce over the fish. Top with the spring onion, sesame seeds, chili and cilantro. Serve immediately.
Tips
- Buy the freshest fish you can, ideally sold as sushi-grade or previously frozen to kill parasites. Keep it cold until the moment you slice it, and serve within minutes of saucing.
- Salmon, yellowtail, tuna or scallops also work. Oily fish like tuna and salmon are richer, so use a little more lime.
