Ripe avocado makes a surprisingly good chocolate mousse. Blended with cocoa and maple syrup, it turns into a thick, silky dessert with no dairy, no eggs and no cooking, and you cannot taste the avocado when the cocoa is strong enough. It takes five minutes in a blender and an hour in the fridge to firm up. The mousse is rich, so serve small portions topped with berries or a spoonful of coconut cream.
Instructions
- Halve the avocados, remove the pits and scoop the flesh into a blender or food processor. Add the cocoa, maple syrup, oat milk, vanilla and salt.
- Blend for 1 to 2 minutes, stopping to scrape down the sides, until the mixture is completely smooth and glossy with no green flecks.
- Taste and add another tablespoon of maple syrup if it is too bitter, or a splash of oat milk if it is too thick to spoon.
- Divide between 4 small glasses or bowls. Cover and chill for at least 1 hour, until firm and cold.
- Serve topped with raspberries, cacao nibs or a spoonful of coconut cream.
Tips
- Use avocados that are fully ripe and soft but not brown or stringy. Underripe fruit leaves a grassy taste and tiny lumps.
- Taste before chilling. Cold dulls sweetness, and cocoa varies in bitterness, so add a little more syrup if you want it sweeter.
