Wurstsalat (Swiss Sausage and Cheese Salad)

Wurstsalat is a Swiss pub-style salad of sausage strips, cheese, onion and pickles in a sharp vinaigrette. The sausage is traditionally cervelat, a mild smoked sausage often called the national sausage, and the cheese is Emmental or Gruyère. Eat it with dark bread and a cold beer. It needs no cooking and tastes best after a short marinade.

Instructions

  1. Peel the casing off the sausages if it is tough, then slice them into thin strips or half moons. Cut the cheese into strips of a similar size.
  2. In a large bowl, whisk the vinegar, water, mustard, salt and pepper. Slowly whisk in the oil until the dressing is smooth.
  3. Add the sausage, cheese, onion and cornichons to the bowl and toss well.
  4. Cover and leave for 30 minutes at room temperature, or 1 hour in the fridge, so the onion softens and the flavors blend. Toss again.
  5. Scatter with the chives and serve with tomato, radishes and dark bread.

Tips

  • Cervelat is hard to find abroad. Use any mild, smooth cooked sausage such as bologna-style sausage, Lyoner or frankfurters. Strips of smoked ham are also good.
  • Slice the onion very thinly and let it marinate in the dressing for the full half hour, which takes off the raw edge. Radishes or tomato wedges add color and crunch.
