Açaí na Tigela (Brazilian Açaí Bowl)

Açaí na tigela is a cold, thick snack sold at juice bars and beach stands in Rio and São Paulo. Frozen açaí pulp, the dark purple fruit of an Amazonian palm, is blended with banana to a texture like soft ice cream and topped with granola and fresh fruit. In the Amazon itself, açaí is a savory staple eaten with fish and cassava flour. The bowl style is the sweet version.

Instructions

  1. Run the açaí packs under warm water for a few seconds, break them up and leave them at room temperature for 5 minutes, until bendable but still icy.
  2. Put the açaí, frozen banana, apple juice and syrup in a blender. Blend on low speed, pushing the mixture down with a tamper or spoon, until thick and smooth like soft-serve. Add more juice a spoonful at a time only if the blades stall.
  3. Scoop the purée into two chilled bowls right away.
  4. Top with the granola, banana, strawberries and coconut and serve immediately with a spoon.

Tips

  • Look for unsweetened frozen açaí purée in supermarket freezers. If your packs are sweetened, leave out the syrup.
  • Keep everything frozen and use as little liquid as possible. A food processor works if your blender struggles.
