Anafres (Honduran Bean and Cheese Fondue with Chorizo)

Anafres are a Honduran party starter: a hot, bubbling mix of refried beans and melted cheese, often with crumbled chorizo, served in a small clay pot set over a coal brazier called an anafre and scooped up with tortilla chips. Think of it as a bean fondue. You can make it without the brazier in a skillet or an oven dish, as long as the cheese stays warm and stretchy.

Instructions

  1. Heat the oil in a skillet over medium heat. Cook the chorizo, breaking it up, for 8 to 10 minutes until browned and cooked through (71°C / 160°F). Lift it out with a slotted spoon.
  2. Cook the onion in the chorizo fat for 4 minutes. Add the garlic for 30 seconds, then the beans, their liquid and the salt. Mash while cooking for 8 minutes, until you have a thick, spreadable puree.
  3. Spread the beans in a heatproof skillet or baking dish. Scatter half of the chorizo over them and cover with the grated cheese.
  4. Broil for 3 to 5 minutes, or cover the pan and heat on low, until the cheese is melted and bubbling.
  5. Top with the rest of the chorizo and the cilantro, and serve hot with the tortilla chips.

Tips

  • Serve straight from the pan on a trivet. The cheese is best stretchy and hot, so do not wait.
  • For a vegetarian anafre, leave out the chorizo and add 1/2 teaspoon of smoked paprika to the beans.

Questions and answers

What is an anafre?

A small clay brazier that keeps the dish hot at the table, which gives the dish its name. Without one, use a cast-iron pan on a trivet or a warming tray.

Can I make anafres ahead of time?

Prepare the beans and chorizo up to 3 days ahead. Add the cheese and heat the dish just before serving.

What cheese works best for anafres?

A melting cheese that stays stretchy, such as mozzarella, Oaxaca or Monterey Jack. A little crumbly salty cheese on top adds flavor.
