Andong Jjimdak (Braised Chicken with Glass Noodles)

Andong jjimdak is a braised chicken dish named for the city of Andong, where it is a local specialty. Bone-in chicken simmers with potatoes, carrots and dried chilies in a sweet soy sauce, and chewy glass noodles go in at the end to soak up the glossy sauce. It tastes mildly spicy, deeply savory and a little sweet, and it is made for sharing from one big dish.

Instructions

  1. Soak the glass noodles in warm water for 30 minutes and drain. Boil the chicken in a pot of water for 3 minutes, then drain and rinse it.
  2. Stir the soy sauce, 2 tbsp of the sugar, rice wine, garlic, ginger, pepper and water together in a bowl.
  3. Heat the oil in a wide heavy pot over medium heat. Add 1 tbsp sugar and cook for 1 to 2 minutes, until it melts and turns amber. Add the chicken and turn it for 1 minute to coat it in the caramel.
  4. Pour in the sauce and add the potatoes, carrots and onion. Bring to a boil, then cover and simmer for 25 minutes.
  5. Add the noodles and dried chilies, pushing the noodles under the sauce. Simmer uncovered for 8 minutes, stirring often, until the noodles are translucent and chewy and the chicken reaches 74°C (165°F).
  6. Stir in the green chili, scallions and sesame oil. Sprinkle with the sesame seeds and serve straight from the pot.

Tips

  • The caramelized sugar gives the dish its dark, glossy color. Stand back when adding the chicken, as it spits. If you skip it, add 1 tbsp dark soy sauce instead.
  • The noodles soak up a lot of sauce. If the pot looks dry before they are tender, add 100 ml (scant 1/2 cup) of water.
