Party sliders are the tray that empties first at a gathering. A whole slab of soft dinner rolls is split, filled with ham and cheese and brushed with a butter glaze spiked with mustard, honey and poppy seeds. Covered baking melts the cheese, and a few minutes uncovered browns the tops. You can assemble it a day ahead, which leaves the host free when guests arrive.
Instructions
- Heat the oven to 180°C (350°F). Grease a 23 x 33 cm (9 x 13 inch) baking dish.
- Without separating the rolls, cut the whole slab in half horizontally with a long serrated knife. Set the bottom half in the dish.
- Spread 2 tablespoons of the mustard over the bottom half. Layer half the cheese on top, then all the ham folded to fit, then the rest of the cheese. Put the top half back on.
- Whisk the melted butter with the remaining tablespoon of mustard, the honey, onion powder, garlic powder and poppy seeds.
- Brush the glaze evenly over the tops of the rolls, letting it soak into the gaps.
- Cover the dish with foil and bake for 15 minutes. Remove the foil and bake for 8 to 10 minutes more, until the tops are golden and the cheese has melted.
- Rest for 5 minutes, then cut between the rolls with a sharp knife and serve warm.
Tips
- To make ahead, assemble and glaze the sliders, cover tightly and chill for up to 24 hours. Bake from cold, adding 10 minutes under the foil.
- Turkey or roast beef work in place of ham. For a vegetarian version, use roasted red peppers, spinach and a little extra cheese.
Questions and answers
Can I freeze ham and cheese sliders?
Yes. Wrap the assembled, unglazed tray in foil and freeze for up to 2 months. Thaw overnight in the fridge, add the glaze and bake as directed.
Which rolls are best for sliders?
Soft rolls that bake as one slab, such as dinner or potato rolls, hold together best. Crusty rolls turn tough after baking.
How do I stop the sliders from getting soggy?
Use a thin layer of mustard instead of mayonnaise, pat wet fillings dry and bake uncovered for the last 8 to 10 minutes so the tops crisp.
