A seafood gratin is a good dinner-party dish that you can assemble ahead and bake when the guests arrive. White fish and shrimp are folded into a creamy leek sauce lightened with white wine and lemon, then topped with garlic breadcrumbs and Parmesan. The seafood cooks gently in the oven, so be careful not to overbake it. Serve with a green salad and crusty bread.
Instructions
- Heat the oven to 200°C (400°F). Season the fish and shrimp with the 1/2 tsp salt and the pepper and let them sit while you make the sauce.
- Melt the 2 tbsp butter in a saucepan over medium heat. Cook the leek for 6 minutes until very soft, adding the garlic for the last 30 seconds.
- Stir in the flour and cook for 1 minute. Add the wine and stir until thick, then whisk in the milk and cream a little at a time.
- Simmer for 4 to 5 minutes, stirring, until the sauce coats a spoon. Stir in the mustard, lemon juice, parsley, the remaining 1/2 tsp salt and the nutmeg.
- Spread the fish and shrimp in a 23 cm (9 inch) square baking dish and pour the sauce over, stirring gently so the seafood is coated.
- Mix the panko, Parmesan, grated garlic and melted butter and scatter over the top.
- Bake for 20 to 25 minutes, until the topping is golden, the sauce bubbles at the edges and the fish and shrimp are opaque and 63°C (145°F) inside. Rest for 5 minutes before serving.
Tips
- Cut the fish and shrimp into similar-sized pieces so everything cooks at the same rate.
- Scallops, mussels or crab meat can replace some of the shrimp. Cooked crab only needs to heat through.
