Bami Goreng (Surinamese Fried Noodles with Chicken)

Bami goreng is one of the dishes you will find at nearly every Surinamese warung, along with nasi goreng. Egg noodles are tossed in a hot wok with chicken, cabbage, leek and plenty of garlic, then seasoned with sweet soy sauce and a little chili paste. A fried egg and crispy onions go on top, and a side of sambal turns up the heat. It is quick to cook, so have everything chopped before the wok goes on.

Instructions

  1. Cook the noodles in boiling water for 1 minute less than the package says. Drain, rinse under cold water, and toss with 1 tablespoon of the oil so they do not stick.
  2. Stir the sweet soy sauce, regular soy sauce, chili paste and white pepper together in a small bowl.
  3. Heat 1 tablespoon oil in a large wok or skillet over high heat. Stir-fry the chicken for 4 to 5 minutes until browned and cooked through to 74°C (165°F). Set it aside.
  4. Add 1 more tablespoon oil. Stir-fry the onion, leek, garlic and ginger for 2 minutes, then add the celery, carrot and cabbage and stir-fry for 3 minutes until crisp-tender.
  5. Add the noodles and chicken, pour over the sauce and toss for 2 to 3 minutes, until the noodles are evenly coated, hot and lightly caramelized in spots.
  6. In a separate skillet, fry the eggs in the remaining oil until the whites are set.
  7. Divide the noodles among 4 plates, top each with a fried egg and crispy onions, and serve with sambal and lime wedges.

Tips

  • Cold, well-drained noodles fry better than hot, wet ones. Rinse them, drain well and let them steam dry for a few minutes before they hit the wok.
  • For a seafood version, stir-fry peeled shrimp for 2 minutes and add them with the noodles. You can also replace the chicken with firm tofu.
