Banana Oat Blender Pancakes

These pancakes start in a blender: ripe bananas, rolled oats, eggs and a splash of milk go in, and a pourable batter comes out in under a minute. There is no flour and no added sugar, because the bananas do the sweetening and the oats provide the structure. They are smaller and softer than classic pancakes, with a pleasant chew, and they are a good way to use up spotty fruit on a busy morning.

Instructions

  1. Put the oats, bananas, eggs, oat milk, baking powder, cinnamon, vanilla and salt in a blender. Blend for 30 to 40 seconds, until smooth and pourable.
  2. Let the batter stand for 5 minutes. The oats will absorb liquid and the batter will thicken to the texture of thick yogurt.
  3. Heat a nonstick skillet over medium-low heat and brush with a little coconut oil.
  4. Pour about 60 ml (1/4 cup) of batter per pancake to make rounds about 8 cm (3 inches) across. Cook for 2 to 3 minutes, until bubbles form and the edges look set.
  5. Flip gently with a wide spatula and cook for 1 to 2 minutes more, until golden and cooked through.
  6. Repeat with the remaining batter, oiling the pan lightly between batches. Serve warm with sliced banana, berries or a spoonful of nut butter.

Tips

  • Use bananas with brown speckles. Green-tinged ones taste starchy and make the pancakes less sweet and slightly gummy.
  • For an egg-free version, replace the eggs with 120 g (1/2 cup) unsweetened applesauce and add 1/2 tsp more baking powder. The pancakes will be more delicate.

Questions and answers

Why do my banana oat pancakes fall apart?

The batter is too thin or the pan is too hot. Let it rest for 5 minutes so the oats absorb liquid, keep the pancakes small and use medium-low heat.

Are banana oat pancakes gluten-free?

Oats are naturally gluten-free but are often processed alongside wheat. Buy oats labeled certified gluten-free if you need a strictly gluten-free breakfast.

Can I make the batter ahead?

Yes. Keep it in a covered jar in the fridge for up to 24 hours. Stir before cooking and add a splash of milk if it has become too thick.
