Two humble ingredients, mashed ripe bananas and rolled oats, make a soft, chewy cookie with no flour, butter, eggs or added sugar. The texture is closer to a baked oat bar than a crisp cookie, which makes these a popular snack and grab-and-go breakfast. The riper the bananas, the sweeter the cookie. Stir in chocolate chips, raisins or chopped nuts to taste.
Instructions
- Heat the oven to 180°C (350°F) and line a baking sheet with parchment paper.
- Mash the bananas in a large bowl with a fork until almost smooth. A few small lumps are fine.
- Stir in the oats, cinnamon, vanilla and salt. Let the mixture stand for 10 minutes so the oats absorb some of the banana moisture, then fold in the chocolate chips, raisins or nuts.
- Scoop heaped tablespoons (about 40 g) onto the sheet, 3 cm (1 in) apart, and flatten each one gently with the back of a spoon. They will not spread on their own.
- Bake for 15 to 18 minutes, until the edges are golden and the cookies feel firm on top.
- Cool on the sheet for 10 minutes, then move to a rack. They firm up as they cool.
Tips
- Use bananas with plenty of brown spots. Green-tinged bananas make bland cookies with a starchy taste.
- For a softer, more cohesive cookie, pulse half the oats in a blender for a few seconds before mixing. Add a spoonful of peanut butter for extra richness.
