Bhatmas Sadheko (Nepali Spiced Roasted Soybeans)

Bhatmas sadheko is a crunchy Nepali snack eaten with drinks, with tea and as a side with rice. Black soybeans are soaked, boiled until tender and then pan-roasted until the outsides are crisp, then tossed while still warm with chopped onion, tomato, green chili, ginger, lime and coriander. The mix of crunch, heat and sourness is addictive. Sadheko means dressed or mixed, and the same style is used for other roasted beans and meats.

Instructions

  1. Cover the soaked soybeans with fresh water by 5 cm (2 in). Bring to a hard boil for 10 minutes, then simmer for 40 minutes, until tender all the way through. Never eat soybeans raw or undercooked.
  2. Drain the soybeans and spread them on a clean towel for 10 minutes to dry well.
  3. Heat a dry skillet over medium heat. Add the beans and roast, stirring often, for 12 to 15 minutes until deep golden, crunchy outside and with some skins cracked.
  4. Tip the hot beans into a bowl. Add the oil, cumin, chili powder, timur and salt and toss to coat.
  5. Add the onion, tomato, green chilies, ginger and coriander. Squeeze in the lime juice and toss well.
  6. Taste, adjust the salt and lime, and serve straight away while the beans are still crisp.

Tips

  • Black soybeans are sold at Asian and Nepali grocery stores. Yellow soybeans work too, or use cooked chickpeas for a quicker version roasted for 10 minutes.
  • Dry the boiled beans well before roasting. Wet beans steam in the pan instead of crisping.
