Blended Iced Coffee

Blended iced coffee is a frozen coffee drink with a slushy, milkshake-like texture. The trick that keeps it from tasting thin is to freeze strong coffee in ice cube trays, so the drink is cold and thick but never watered down. Everything else is milk, sweetener and a minute in the blender. Make the cubes the night before and you can have a frosty coffee in two minutes on a hot afternoon.

Instructions

  1. Brew the coffee strong, using about double your usual amount of grounds. Let it cool, pour it into an ice cube tray and freeze for at least 4 hours.
  2. Pour the milk, simple syrup and vanilla into the blender.
  3. Add the coffee cubes on top.
  4. Blend on high for 45 to 60 seconds, until the drink is smooth and slushy with no large chunks. If it is too thick to blend, add a splash more milk.
  5. Taste and add a little more syrup if you want it sweeter.
  6. Pour into two tall glasses, add whipped cream and a drizzle of chocolate sauce if you like, and serve with a wide straw.

Tips

  • Freeze extra coffee cubes whenever you have leftover coffee. Use a strong brew, since the milk will soften the flavor.
  • For a mocha version, add 1 tablespoon of cocoa powder and an extra spoonful of sugar. For a creamier drink, blend in half a frozen banana.
