The Caesar is Canada's signature cocktail, something like a Bloody Mary but made with clam-tomato juice, which gives it a savory, briny depth. It is mixed with hot sauce, Worcestershire sauce and horseradish, served over ice in a glass rimmed with celery salt and garnished with celery, a lime wedge and often a pickled bean. Vodka makes it the classic cocktail. It is a favorite at brunch and at the cottage in summer.
Instructions
- Run the lime wedge around the rim of two tall glasses, then dip each rim in the celery salt and pepper mixture.
- Fill the glasses with ice.
- In a jug, combine the clam-tomato juice, vodka if using, Worcestershire sauce, horseradish, hot sauce, lime juice and pepper. Stir gently with a few ice cubes for 10 seconds.
- Pour the mixture into the prepared glasses.
- Garnish each drink with a celery stalk, a lime wedge and a pickled bean, and serve right away.
Tips
- No clam-tomato juice? Mix 360 ml (1 1/2 cups) of tomato juice with 120 ml (1/2 cup) of bottled clam juice. The drink is also good as a virgin Caesar without the vodka.
- For a thicker, spicier drink, add a pinch of smoked paprika or a spoonful of dill pickle brine. Keep the horseradish to taste, since brands and freshness vary.
