Boerenkoolstamppot (Dutch Kale Mash with Smoked Sausage)

Boerenkoolstamppot is the Dutch winter dish, traditionally made after the first frost, when kale turns sweeter. Potatoes and finely cut kale cook together, then are mashed with butter and milk into a rustic green mash. It is served with a smoked sausage (rookworst) and a spoon of mustard or a pool of gravy in a dent in the middle. Stamppot is eaten from the plate with a fork or spoon, and it reheats very well.

Instructions

  1. Put the potatoes in a large pot, cover with cold salted water and bring to a boil. Cook for 10 minutes.
  2. Pile the shredded kale on top of the potatoes and press it down. Cover and cook for 15 minutes more until both are tender. Lay the sausage on top for the last 10 minutes to heat through.
  3. Lift out the sausage. Drain the vegetables well, keeping about 1 cup (250 ml) of the cooking water.
  4. Return the vegetables to the pot and add the butter, hot milk and nutmeg. Mash coarsely with a masher until the potatoes are mostly smooth and the kale is still visible.
  5. Loosen with a splash of the cooking water if the mash is stiff. Season with salt and pepper.
  6. Slice the sausage into thick pieces.
  7. Serve the stamppot with a dent in the middle for mustard or gravy, with the sausage on top.

Tips

  • Kale tastes sweeter after the first frost. If using bagged kale, remove thick stems and chop it very finely, or pulse it in a food processor.
  • For extra flavor, stir in 100 g (3.5 oz) crisp fried bacon at the end. The same method works with endive, sauerkraut or spinach in place of the kale.
