Bofrot are puffy fried dough balls with a golden crust and a light, chewy inside. The batter is a yeasted mix of flour, sugar, nutmeg and a little milk, left to rise and then dropped by hand into hot oil, where the balls turn themselves over as they puff. Street sellers pile them into paper bags, and they are best eaten warm with roasted groundnuts or a cup of tea.
Instructions
- Whisk the flour, sugar, yeast, nutmeg and salt in a large bowl.
- Pour in the milk and water and beat hard for 3 minutes into a smooth, thick, sticky batter, a little looser than bread dough.
- Cover the bowl and leave it in a warm place for 1 hour, until doubled and full of bubbles.
- Heat the oil in a deep pot to 170°C (340°F). A small drop of batter should sink, then rise within a few seconds.
- Stir the batter down. With a wet hand, squeeze out walnut-sized balls through your fist and slide them into the oil, about 6 at a time.
- Fry for 4 to 5 minutes, turning, until deep golden and cooked through. Drain on paper towels and serve warm.
Tips
- Wet your hand between scoops so the sticky batter slides off cleanly.
- Keep the oil at 170°C (340°F). If it is hotter, the outside browns before the center cooks, and if it is cooler the bofrot turn greasy.
