Cambodian iced coffee is strong, dark and sweet, sold at street stalls and cafes in tall glasses. Vendors brew it by pouring hot water through a cloth filter, often called a sock, and sweeten it with a thick layer of condensed milk. The coffee is then poured over ice. At home, a moka pot, French press or pour-over works well, as long as you brew it extra strong.
Instructions
- Brew the coffee strong: steep the grounds in the hot water in a French press for 4 minutes, or use a cloth filter, moka pot or pour-over.
- Put 2 tbsp of condensed milk into each of two tall glasses.
- Pour about 150 ml (2/3 cup) of hot coffee into each glass and stir well until the condensed milk dissolves completely.
- Fill the glasses with crushed ice and stir for 10 seconds to chill the drink.
- Top with a splash of evaporated milk if you like, and serve with a straw.
Tips
- Brew the coffee stronger than usual, because the ice will dilute it. A dark roast with some chicory or robusta has a closer flavor to the Cambodian original.
- Add less condensed milk if you prefer a bitter edge. For a dairy-free version, use sweetened coconut condensed milk.
