Bissap (Senegalese Hibiscus Drink)

Bissap is the ruby-red drink made from dried hibiscus flowers, sold in bottles and small bags on Senegalese street corners and poured at family gatherings. The flowers steep in hot water, and the tart liquid is sweetened and flavored with mint, vanilla or orange blossom water. It is served ice cold and is especially popular in hot weather and during Ramadan. Make a large batch, since it disappears quickly.

Instructions

  1. Rinse the hibiscus flowers briefly in a sieve under cold water to remove any dust.
  2. Bring the 1.5 L of water to a boil in a large pot. Turn off the heat, add the hibiscus and the mint, cover and steep for 20 minutes.
  3. Strain the liquid into a large jug, pressing the flowers with a spoon to extract all the color. Discard the flowers and mint.
  4. While the liquid is still warm, stir in the sugar until dissolved, then add the vanilla and the orange blossom water, if using.
  5. Add the cold water, taste, and adjust with more sugar or water. Chill for at least 2 hours.
  6. Serve over ice with a sprig of fresh mint.

Tips

  • Steep, do not boil the flowers for long. Extended boiling makes the drink bitter.
  • Add a few slices of fresh ginger or a splash of pineapple juice to the steeping pot for a variation popular in Senegal.
