Caramelized Onion Dip

Onions cooked slowly until they turn sweet, sticky and deeply savory make a dip with far more depth than any shortcut. The cooking takes patience but little effort: low heat, a pinch of salt and a stir every few minutes. Folded into sour cream and Greek yogurt, the onions give a dip that tastes even better after a night in the fridge. Serve it with potato chips, crackers or raw vegetables, or spread it on burgers.

Instructions

  1. Heat the oil and butter in a large wide skillet over medium-low heat. Add the onions and 1/2 teaspoon of salt and stir to coat.
  2. Cook for 35 to 45 minutes, stirring every few minutes, until the onions are deep golden brown and jammy. If they stick or darken too fast, add 1 tablespoon of water and lower the heat.
  3. Stir in the garlic and thyme and cook for 1 minute. Tip the onions onto a board, let them cool for 10 minutes and chop them roughly.
  4. In a bowl, stir together the sour cream, yogurt, lemon juice, 1/4 teaspoon of salt and a good grind of pepper.
  5. Fold in about three-quarters of the onions. Taste and add more salt if needed.
  6. Cover and chill for at least 1 hour, or overnight. Serve topped with the remaining onions and chopped chives.

Tips

  • Do not rush the onions. High heat gives bitter, burnt edges instead of sweetness. A pinch of sugar and a splash of balsamic vinegar at the end add depth if they taste flat.
  • Cook a double batch of onions and freeze half in a small container. They are also good on burgers, pizza and toast.
