Carrot Ginger Dressing

Carrot ginger dressing is the orange, lightly sweet sauce that arrives with the side salad at many noodle and rice shops. It is easy to make at home with a blender and a few pantry ingredients. Raw carrot supplies body and sweetness, ginger and rice vinegar sharpen it, and a little sesame oil gives a toasty finish. It is vegan, full of vegetables and good on lettuce, cabbage slaw, grain bowls and as a dip for raw vegetables.

Instructions

  1. Peel the carrots and the ginger. Chop the carrots into pieces about 1 cm (1/2 inch) wide so the blender can break them down evenly.
  2. Put the carrots, shallot, ginger, rice vinegar, tamari, maple syrup and water in a blender.
  3. Blend on high for 1 minute, stopping once to scrape down the sides, until the mixture is very smooth with no flecks of carrot.
  4. With the blender running on low, pour in the sesame oil and the neutral oil in a thin stream. The dressing turns creamy and pale orange.
  5. Taste and adjust with a splash of tamari for salt, vinegar for sharpness or maple syrup for sweetness. Thin with water if it is too thick to pour.
  6. Pour into a jar and chill for at least 30 minutes. Shake or stir before using.

Tips

  • If your blender struggles with raw carrot, steam or microwave the chopped carrot for 4 to 5 minutes first and let it cool slightly.
  • Add 1 teaspoon of white miso for a deeper savory flavor, or a squeeze of orange juice for extra sweetness.
