Chewy Oatmeal Raisin Cookies

Oatmeal raisin cookies have loyal fans and a few doubters, usually people who only met dry, cakey ones. This version is built for chew: plenty of rolled oats, brown sugar, a spoonful of honey, and raisins soaked in hot water so they stay plump instead of pulling moisture from the dough. Cinnamon is the only spice. The cookies are sturdy enough for a lunchbox or a picnic basket.

Instructions

  1. Cover the raisins with hot water and leave them for 10 minutes, then drain well and pat dry. This keeps them plump and juicy in the baked cookie.
  2. Beat the butter, brown sugar and granulated sugar for 2 minutes until fluffy. Beat in the egg, honey and vanilla.
  3. Stir the flour, cinnamon, baking soda and salt together, then mix them into the butter mixture. Stir in the oats and raisins until evenly spread. The dough will be thick.
  4. Cover and chill the dough for 30 minutes. Heat the oven to 180°C (350°F) and line two baking sheets with parchment paper.
  5. Scoop balls of about 50 g (a heaped 1/4 cup) onto the sheets, 5 cm (2 in) apart, and press each one down to about 2 cm (3/4 in) thick.
  6. Bake for 11 to 13 minutes, until the edges are golden brown and the middles look slightly underdone. They set as they cool.
  7. Rest the cookies on the sheet for 5 minutes, then cool them on a wire rack.

Tips

  • Old-fashioned rolled oats give the best chew. Quick oats make a smoother, more cakey cookie, and steel-cut oats stay hard.
  • Not a raisin fan? Swap in dried cranberries or cherries, or use 150 g (1 cup) chocolate chips and chopped walnuts instead.

Questions and answers

Why are my oatmeal raisin cookies dry?

Too much flour or too long in the oven are the usual causes. Weigh the flour, soak the raisins and take the cookies out while the centers still look soft.

Can I make oatmeal raisin cookies without eggs?

Yes. Replace the egg with 60 g (1/4 cup) unsweetened applesauce. The cookies come out a little softer and more cake-like.

How long do oatmeal raisin cookies stay fresh?

They keep for 5 days in an airtight container at room temperature, and they freeze well for up to 3 months. The flavor improves after the first day.
