Chicken and Vegetable Foil Packets

Foil packets steam everything in its own juices, so the chicken stays tender and the vegetables pick up the garlic butter. Each person gets a packet to open at the table, which makes this a fun dinner for children and a good option for camping or the grill. Cutting the potatoes small is the one rule, since they need the longest. Serve straight from the foil with a squeeze of lemon.

Instructions

  1. Heat the oven to 200°C (400°F), or heat a grill to medium-high. Tear off four sheets of heavy-duty foil, each about 40 cm (16 inches) long.
  2. Whisk the butter, garlic, oil, salt, pepper, oregano and paprika in a large bowl.
  3. Add the chicken, potatoes, zucchini, pepper and onion and toss until everything is coated.
  4. Divide the mixture among the foil sheets, mounding it in the center. Fold the foil over and crimp the edges tightly to seal, leaving a little space inside for steam.
  5. Place the packets on a baking tray and bake for 28 to 32 minutes, or grill with the lid closed for 20 to 25 minutes, until the potatoes are tender and the chicken reads 74°C (165°F).
  6. Open one corner carefully, because hot steam escapes. Check a potato and a piece of chicken, and close up again for 5 minutes if needed.
  7. Squeeze lemon over each packet, sprinkle with parsley and serve in the foil.

Tips

  • Cut the potatoes smaller than everything else, because they cook the slowest. Microwave them for 3 minutes first if you are short on time.
  • Use any vegetables you like: green beans, corn, carrots, mushrooms or cherry tomatoes. Keep the pieces small and similar in size.
