Lime and chili make plain chicken taste lively, and corn and black beans turn it into a complete meal in one pan. The chicken is seasoned with cumin, chili powder and garlic, seared, then simmered with the vegetables and a little stock until the sauce is thick. Finish with lime juice and cilantro (fresh coriander) at the table. Serve over rice, or spoon into warm tortillas.
Instructions
- Toss the chicken with half the salt, the chili powder, cumin and garlic powder. Heat the oil in a large deep skillet over medium-high heat.
- Brown the chicken for 5 to 6 minutes, stirring now and then. Move it to a plate.
- Add the onion and pepper to the pan and cook for 5 minutes until softened. Stir in the garlic for 30 seconds.
- Add the corn and cook for 3 minutes, until a few kernels begin to brown.
- Return the chicken and add the beans, stock and lime zest. Simmer uncovered for 8 to 10 minutes, until the chicken reaches 74°C (165°F) and most of the liquid has reduced.
- Stir in the lime juice and the remaining salt. Taste, scatter with cilantro and serve hot.
Tips
- Use a mild chili powder for children, or add a chopped fresh chili or a spoonful of hot sauce for more heat. Chili powder here means the ground spice blend.
- Pinto or kidney beans work in place of black beans. If you use chicken breast, add the pieces for the last 8 minutes only so they do not dry out.
